
Khichri is a complete, wholesome meal all in one. Try this dish when your immunity is low and it will help with restoring balance in the body.
So many cultures have a rice and beans dish. When I traveled to Costa Rica I must have eaten a dish called Casado (rice + beans) almost every day. It was delicious! The term casado means married in Spanish, so the Costa Ricans said it right—rice and beans is a match made in heaven.
No doubt the universality of the rice and beans combination is no mistake—it acts as a whole meal in one providing sustenance and nourishment, especially during times when immunity is low.
In Indian cuisine, our dish of rice and beans (rather lentils) is Khichri. It’s typically served when one is ill and needs to restore immunity in the body.
During the transition into a new season our bodies are more susceptible to respiratory problems and lower immunity as we adjust to new temperatures, making this dish perfect for right now. This dish helped me during cold and flu season so I wanted to share it with you.

Khichri
A simple rustic rice and lentil complete meal in one!
Ingredients:
2 cups basmati rice
½ cup moong dal
1 tbsp. ghee or oil
1 medium onion, sliced
2 tsp. Arvinda’s Curry Masala
4 cups water, add more if necessary
1/2 tsp. sea salt
½ tsp. Arvinda’s Garam Masala, to garnish
Method: In two separate bowls, wash rice and dal separately in several changes of water. Set aside and soak for 15 minutes.
In a large non-stick add ghee or oil. Add onions and cook until slightly golden in colour. Add Arvinda’s Curry Masala and mix well.
Rinse rice and lentils again in 2-3 changes of water. Drain and add to the onion and spice mixture.
Add water and sea salt. Cover and cook on a medium heat until all the water is absorbed and lentils and rice are cooked.
Garnish with a sprinkle of Arvinda’s Garam Masala. Serve with a vegetable curry and yogurt. Serves 2-4.

Beautiful! Particularly when sick, we add a dollop of ghee over the steaming hot Khichdi before eating. Yumm!
