Visiting the Oakville Organic Farmers’ Market I picked up some kale anticipating to make a salad or wilted greens. After chatting at the market about kale chips, I got home craving them and made savoury, spicy Masala Kale Chips–almost immediately!

Come by Oakville's Organic Farmers' Market, Saturdays 9-1pm for some great local and organic produce.
Love them as chips!

Masala Kale Chips
Ingredients:
1 head kale, washed and trimmed
1/4 cup cashews, finely ground
2 tbsp. Arvinda’s Madras Masala
1 – 2 tbsp. oil
1 tbsp. scallions, finely minced
1 clove garlic, finely chopped
Method: Preheat oven to 350F. After 10 minutes turn oven off.
Finely chop kale. In a large bowl, combine cashews, Arvinda’s Madras Masala, oil, scallions and garlic. Mix together. Add chopped kale and toss, coating all leaves.
Arrange on a baking sheet. Place in warm oven and let sit for 30 minutes to an hour. If they are not crispy put heat up to 200F and bake for 10 minutes.

I knew kale was packed with good stuff since its loaded with chlorophyll, but I didn’t realize its calcium content exceeds dairy products and is an amazing source of vitamins A and C.
To my delight, kale chips spiced with Arvinda’s Madras Masala is one of the easiest ways to get some greens! Kale + turmeric…you cannot go wrong!

hello im going to make these today. the only nuts i have on hand are walnuts, almonds, pecans .. i also have pumpkin seeds, sesame seeds.
can i sub the cashews with one of these ?

Arvinda’s Curry Masala (medium blend) or Arvinda’s Madras Masala (medium-hot). These two blends can be used interchangeably. Hope that helps!

If your palate can handle more heat and flavour, try Arvinda’s Madras Masala which is our medium-hot blend. Hope you can try it and please let us know your thoughts!
