
Indian-style coleslaw of cabbage and carrots spiced with Arvinda’s Curry Powder.
Sadly another summer has passed but luckily we had such beautiful weather all summer long. I want to share with you an Indian-Style Cabbage & Carrot Coleslaw (minus the mayo!!) called Sambharo I made over the summer.

Indian-Style Cabbage & Carrot Coleslaw ~ Sambharo
Ingredients:
¼ medium-sized cabbage, finely shredded
2 medium carrots, peeled and grated
2 tsp. oil
½ tsp. mustard seeds
6-8 Arvinda’s Curry Leaves
1-2 dried red chilies (optional)
½ tsp. sea salt OR salt to taste
2 tsp. Arvinda’s
Curry Powder
1 tsp. raw cane sugar
1 tsp. fresh lime juice
2 tbsp. dried unsweetened coconut, to garnish
Method: In a wok or pan, heat oil on medium heat. Add mustard seeds and fry until they pop. Be sure to cover the pan while mustard seeds are popping. Add Arvinda’s Curry Leaves and dried red chilies. Add cabbage, carrots, salt, Arvinda’s Curry Powder, sugar and lemon juice.
Mix and stir fry for a few minutes until vegetables are slightly cooked. Be sure you do not over cook the vegetables, as they should stay slightly crunchy. Serve as a side dish warm or chilled.
